dc.description.abstract Micronutrient deficiency and protein energy malnutrition (PEM) is a serious health concern in most developing countries affecting the health of young-children. The present study was designed to develop micronutrient enriched sandwich biscuits to address malnutrition in vulnerable segments. The prime mandate of the current investigation was to formulate a micronutrient fortified designer product for school going children showing the signs for malnutrition. The intensive nutritional profiling with special reference to their mineral and vitamin content, proximate and antioxidant profile was carried out to correlate their micronutrient deficiencies combating ability. Moreover, sensory elucidation was carried to forecast their acceptability. ru
